98/365 Wednesday

Yummy pie...not just any pie but French Silk Chocolate pie, my favorite! Its simply divine but very rich!!
Now the picture doesn't do it justice, the whipped cream has been smooshed under cling wrap and I didn't put chocolate curls for decoration because I was too busy cooking other things.Its really easy to make!I got the recipie from allrecipies.com and I make a from scratch crust and whip the whip cream too. So much better than store bought, plus the boys love to help get rid of the extra whipped cream!

French Silk Pie
  • 1 cup butter, room temperature
  • 1-1/2 cups white sugar
  • 4 (1 ounce) squares unsweetened baking chocolate, melted and cooled
  • 2 teaspoons vanilla extract
  • 4 eggs
  • 8 inch pastry shell, baked and cooled
  1. Cream butter in a mixing bowl. Gradually beat in the sugar with an electric mixer until light colored and well blended. Stir in the thoroughly cooled chocolate, and vanilla extract. Add the eggs, one at a time, beating 5 minutes on medium speed after each addition. Spoon the chocolate filling into a cooled, baked pie shell. 
  2. Refrigerate two hours before serving!
